A zippy blend of two vinegars and dash of The Usual, our signature spice blend, creates an addictively tangy, flavorful mop sauce that balances the richness of smoked pork and brightens any grilled meat served over noodles or leafy greens.
Instructions for Use:
Marinate meat with a drizzle of olive oil and enough mop sauce to generously coat and refrigerate up to 1 day in advance (8 hours for chicken) before cooking over indirect heat.
For slow smokes, brush meat with mop sauce every hour while cooking, and then serve with additional sauce. For faster cooks (e.g. chicken thighs), brush meat with sauce during the last 5-10 minutes of cooking over direct heat.
